Chicken Fried Rice Recipe
Ingredients:
- 1 cup cooked chicken, diced
- 2 1/2 cup chicken broth
- 2 1/2 cup onion, chopped
- 1 cup long grain rice, uncooked
- 2 eggs, slightly beaten
- 1 tablespoon soy sauce
- 1/3 cup salad oil
- 1 cup lettuce, shredded
- 1/4 cup green pepper, chopped
- 1/4 cup celery, sliced
- 1/2 teaspoon salt
Instructions:
1. In a bowl, combine the chicken, soy sauce and salt. Put it aside for 15 minutes.
2. Preheat the skillet over medium heat and add in the oil. When the oil turned hot, pour in the rice and cook it until golden brown. Be sure to stir the rice frequently so that it does not stick to the bottom of the skillet.
3. Switch to low heat and add in the chicken earlier together with the chicken broth.
4. Cover the skillet and let it simmer for 25 minutes until the rice become soft.
5. Remove the cover and add in the chopped onion, green pepper and celery.
6. Switch back to medium heat and let it cook until there is no more liquid in the skillet.
7. Make a hole in the middle of the rice mixture and add in the eggs. When the eggs are cooked, combine it with the rice mixture and add in the lettuce.
8. Stir fry a bit and serve immediately.
